From Vine to Glass – The Story of Our Wines

A Project Close to Our Hearts
Some things at the Inn take shape slowly, quietly, and with great care. Our wine project has been one of them. Over the past few years, we’ve worked towards something we’ve long wanted to achieve: a collection of wines that are entirely our own. Not simply selected from a list, but made for us, shaped by our tastes, and crafted by people whose approach mirrors our own values of provenance, care, and attention to detail.
The result began with two bottles: a crisp, versatile Blanc and a smooth, fruit-led Rouge. Over time, they became part of the fabric of the Inn — poured at lunch and dinner, chosen for celebrations, and often taken home by guests to share beyond our walls.
Now, that range has not only been refined and elevated in quality but expanded. For the first time, we have our own Rosé, completing a trio of wines that we are proud to have our name on.
Why Bordeaux?
The search for a winemaking partner took us back to a place that’s personally significant to Patrick, our owner. He grew up just outside Bordeaux — a region with an unrivalled reputation for producing wines of balance, elegance, and character. Bordeaux is not about extremes; it’s about harmony. The reds are structured yet refined, the whites fresh yet layered, and the rosés pale, dry, and quietly confident.
It’s also a place where winemaking is often a family tradition, passed from one generation to the next, with the same land tended for decades or even centuries. This connection to place and people felt essential. We wanted to know not just how our wines were made, but by whom.
A Family Connection
We found that connection with the Ducourt family, who have been making wine in the Bordeaux region for generations. Their vineyard, Château d’Haurets in the Entre-Deux-Mers, combines meticulous vineyard management with an unhurried approach to winemaking. Grapes are hand-picked at their peak, handled gently, and fermented in a way that allows the natural character of the fruit to shine.
Working with the Ducourt family feels like an extension of our own ethos. Just as we take pride in knowing the fisherman who catches our seafood or the grower who tends our vegetables, we now know the people behind every bottle we pour.
Meet the Wines
TOTI Blanc – Fresh, bright, and aromatic, with citrus and floral notes that lift from the glass. Crisp and clean on the palate, it’s an ideal partner for seafood, summer salads, or a simple goat’s cheese starter.
TOTI Rouge – Smooth, rounded, and full of ripe berry flavours, with soft tannins and a lingering finish. Equally at home with a slow-cooked lamb shank or a wedge of Comté by the fire.
TOTI Rosé – Our newcomer, and the final piece in the puzzle. Pale and delicate in colour, it offers aromas of raspberry and red fruit, a hint of florals, and a crisp, dry finish. Versatile and refreshing, it’s perfect with charcuterie, seafood, wood-fired pizza, or enjoyed on its own on a warm afternoon.
